Hacienda Maya School of Culinary Arts offers classes with Mayan Chef Pedro Balam Dzul, Executive Chef, Ajua Maya Restaurant in authentic dishes of the Maya, Mexican and Mestizo – a culinary experience of flavorful spices and scrumptious dishes such as the Mayan Pibil Sauce, the famous festival dish Mole (a chocolate chili sauce) and fresh wild Mayan lobster flambéed by the table and accompanied with a Caesar salad.

Each class offers hands-on preparation, recipe book, diploma, and lots of wonderful food and great fun in the famous AJUA Maya restaurant located in Playa del Carmen on Calle 4 between 5th & 10th Avenidas. For more information, please contact us . . .

Hewlett Packard SCHEDULE

10:00 a.m. Arrival : Brenda Alfaro introducing the Hewlett Packard class to cuisine of the Maya and our own Mayan Chef Pedro Balam Dzul. Classes are available in English, Spanish, Maya, French, Italian and German. Capacity up to 50 participants in two groups of 25.

10:15 a.m. : Yucatek Margarita
Luis, one of AJUA's charming and entertaining flair waiters serving the opening margarita, Yucatek style – on his head! Who says school has to be boring?

10:45 a.m.
Chef Pedro demonstrates the expert preparation of the dishes on the menu.

11:15 a.m.
Enjoying a taste of the soup course.

11:45 a.m.
Things got a bit quiet -- sitting and learning so much -- so stretch time included Meringue Classes!

. . . which created so much energy that all danced out onto the street!

. . . and onto the charcoal grill loaded with Cornish Game Hens marinated with Pibil sauce.

12:15 p.m.
Time to enjoy the meal you prepared with Chef Pedro Balam and the AJUA! Maya staff.
